    Forget those soggy Taco Bell imitations. This healthy Crunchwrap Supreme is actually crunchy, packed with fresh ingredients, and so tasty you won't be able to stop at one. With less than 450 calories and 46 g of protein, you will love taco night's new twist.

    We tried the old-school way โ€“ big tortilla, tostada inside โ€“ but let's be real, those tostadas always got mushy. A true Crunchwrap deserves its name, so we felt it was worth the tortilla folding change to deliver you an irresistible crunch.

    Ingredients

    Crunchwrap supreme ingredients: 95/5 lean ground beef, red pepper, tomato, onion, cumin, salt, lemon juice, cheese, shredded lettuce, burrito wrap, corn chips, and Greek yogurt.

    Instructions

    Make the sauce

    High-protein sour cream ingredients in a bowl: Greek yogurt, lemon juice, cumin, salt.

    Stir the Greek yogurt, cumin and salt together.

    Set aside.

    Prep the veggies

    Diced onion, red pepper, and tomato.

    Dice the onion, red bell pepper and tomato.

    Cook the beef.

    Add the taco seasoning and simmer for 3-4 minutes.

    Assembly

    Cut the wrap at the 3 o'clock position to prep the Crunchwrap for folding.

    Lay the tortilla on a cutting board and cut a quarter line from the middle to the edge at the 3 oโ€™clock position.

    Add ingredients in this order:  moving clockwise from the lower right quarter โ†’ lettuce + tomato โ†’ chips โ†’ beef โ†’ cheese

    Flip the first quarter, the lettuce and tomato, on top of the chips.

    Flip one quarter of the tortilla with the shredded lettuce and tomato on top of the chips.

    Flip the chips to the beef

    Next fold up to the beef.

    Flip the beef to the cheese

    Finally fold the beef quarter over the cheese.

    Toasted Crunchwrap Supremes

    Lightly toast the wrap in a grill or panini press.

    Freshly toasted crunchwrap, cut in half and ready to be served.

    Serve immediately.

    Substitutions

    • Gluten free gluten-free substitute icon - Use a gluten-free wrap and ensure all of your spices and corn chips are gluten free.
    • Vegan/Vgetarian Vegan icon - Swap the ground beef for textured soy protein, lentils, beans or a plant-based ground beef substitute. Use dairy free cheese and yogurt in the sauce.
    • Low calorie & carb - We use low-carb flour tortillas and you can even swap the corn chips for baked tortilla chips.
    • Changing the meat - You can swap the beef for lean ground turkey, ground chicken breast, or crumbled tofu.
    • Adding veggies - Fresh avocado or guacamole are other delicious veggie options to add.

    Variations

    Higher protein - This recipe is designed to fit ยผ lb of ground beef on each wrap. Depending on your protein goals, you may want to eat 1 ยฝ - 2 of these tacos or you can make them โ…“ lb tacos if you want to save some carbs. Here are the key macros for the ยผ and โ…“ lb options.

    • ยผ lb taco (as written) - 443 cal - 46 g protein - 12 g fat - 52 g carbs
    • โ…“ lb - 536 cal - 57 g protein - 18 g fat - 50 g carbs

    Spicy - Add ยฝ teaspoon of chili powder, pepper, or cayenne pepper to the beef to dial up the heat. Top with your favorite hot sauce or salsa and you're set.

    Kid friendly - We use our kid-friendly taco seasoning, which is as mild as it gets. We use street tacos or small tortillas for the kids so they get to have a fun folded taco that's just their size.

    Equipment

    Optional Panini or Sandwich Press - Grill the burritos in either a panini grill or on the stovetop in a pan. Toasting them is an essential step that makes them crisp and soft and you get the most delicious light crunch when you eat them fresh.

    Storage

    Make Ahead - These tacos are perfect for weekday meal prepping and they reheat in a panini press surprisingly well. Store leftover tacos individually in an air-tight container in the fridge. These will keep for up to 5 days in the fridge.

    Freeze - Wrap the tacos in wax paper or aluminum foil and let them cool completely before freezing. Put them in an air-tight, freezer safe container and store for up to 3 months.

    Reheating

    • Microwave - Remove the wrapper and microwave frozen tacos for 1-2 minutes or refrigerated burritos for 1 min, flip and then cook for another 1-2 minutes if needed. Pop them on a panini press before serving to make the wrap crispy.
    • Air fryer or oven - You can also reheat in the air fryer or oven at 350 F (175 C) for 15-20 minutes or until cooked through.

    The secret to crispy corn chips in your Crunchwrap is strategic folding. Order matters when folding the Crunchwrap! Keep the corn chips separate from the beef when folding them to prevent them from going soggy when toasting the wrap.

We fold the tortilla in quarters and keep the meat separate from the corn chips, which keeps everything crispy. For a crispy exterior, heat a skillet or griddle over medium heat and cook the assembled Crunchwraps for 2-3 minutes on each side, pressing down gently with a spatula. This will help seal the edges and create a golden-brown, crispy tortilla.

    What can I substitute for the ground beef?

    Ingredients

    High-Protein Sour Cream

    • ยฝ cup (125 g) Greek yogurt (non-fat)
    • 1 tablespoon (15 g) lime juice (or lemon juice)
    • ยฝ teaspoon cumin
    • ยฝ teaspoon salt

    Crunchwrap Filling

    • 1 onion
    • 1 red bell pepper
    • 1 lb (450 g) ground beef (95/5)
    • 2 tablespoons (30 g) taco seasoning (1 packet of taco seasoning)
    • olive oil cooking spray (or avocado cooking spray)

    Crunchwrap Taco

    • 4 burrito wraps (low carb)
    • iceberg lettuce (shredded)
    • 1 tomato
    • 24 corn chips (6 per taco)
    • 1 cup (112 g) cheese (low fat, shredded)

    Instructions 

    Make the sauce

    • Stir the Greek yogurt, lime juice, cumin and salt together and set aside.
