Instructions
Make the sauce
Stir the Greek yogurt, cumin and salt together.
Set aside.
Prep the veggies
Dice the onion, red bell pepper and tomato.
Sautรฉ the onion and red pepper until they are soft.
Cook the beef.
Add the taco seasoning and simmer for 3-4 minutes.
Assembly
Lay the tortilla on a cutting board and cut a quarter line from the middle to the edge at the 3 oโclock position.
Add ingredients in this order: moving clockwise from the lower right quarter โ lettuce + tomato โ chips โ beef โ cheese
Flip one quarter of the tortilla with the shredded lettuce and tomato on top of the chips.
Next fold up to the beef.
Finally fold the beef quarter over the cheese.
Repeat folding for each Crunchwrap.
Lightly toast the wrap in a grill or panini press.
Serve immediately.

- Vegan/Vgetarian - Swap the ground beef for textured soy protein, lentils, beans or a plant-based ground beef substitute. Use dairy free cheese and yogurt in the sauce.
- Low calorie & carb - We use low-carb flour tortillas and you can even swap the corn chips for baked tortilla chips.
- Changing the meat - You can swap the beef for lean ground turkey, ground chicken breast, or crumbled tofu.

Optional Panini or Sandwich Press - Grill the burritos in either a panini grill or on the stovetop in a pan. Toasting them is an essential step that makes them crisp and soft and you get the most delicious light crunch when you eat them fresh.
Storage
Make Ahead - These tacos are perfect for weekday meal prepping and they reheat in a panini press surprisingly well. Store leftover tacos individually in an air-tight container in the fridge. These will keep for up to 5 days in the fridge.
Freeze - Wrap the tacos in wax paper or aluminum foil and let them cool completely before freezing. Put them in an air-tight, freezer safe container and store for up to 3 months.
Reheating
- Microwave - Remove the wrapper and microwave frozen tacos for 1-2 minutes or refrigerated burritos for 1 min, flip and then cook for another 1-2 minutes if needed. Pop them on a panini press before serving to make the wrap crispy.
- Air fryer or oven - You can also reheat in the air fryer or oven at 350 F (175 C) for 15-20 minutes or until cooked through.

- iceberg lettuce (shredded)
- 1 tomato
- 24 corn chips (6 per taco)

Instructions
Make the sauce
