Instructions
Preheat oven to 400°F (200°C).
Spray diced sweet potatoes with olive oil cooking spray, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
While sweet potatoes are roasting, brown the ground beef in a large skillet over medium heat.
Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
Stir in green beans, beef broth, tomato paste, and thyme. Simmer for 10 minutes.
Season with salt and pepper to taste.
Serve with roasted sweet potatoes immediately or into equal portions for later.
