Ingredients

  • pound (800 g) chicken breast boneless, skinless, diced into small pieces
  • 2 medium bell peppers sliced
  • 1 small onion sliced
  • 2 tablespoons (14 g) fajita seasoning 1 packet
  • olive oil cooking spray

1-min Zesty Lime Sauce

  • 1 cup (240 g) Non-fat Greek yogurt
  • 3 tablespoons (45 g) lime juice
  • 3 handfuls coriander or parsley

Assembly

  • 4 low carb burrito tortillas
  • 1 cup (100 g) reduced-fat shredded cheese
  • 1 medium avocado sliced
  • lime wedges for serving optional garnish

Instructions 

Fajitas

  • Season the chicken with fajita seasoning in a bowl.
  • Pre-heat a large skillet over medium-high heat and spray with olive oil cooking spray. Cook the chicken until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, sauté the bell peppers and onions until tender-crisp, about 5 minutes.

Zesty Lime Sauce

  • Add all lime sauce ingredients in a blender and blend until smooth.

Assemble the Fajitas

  • Divide the chicken, peppers, and onions equally among the tortillas.
  • Top each wrap with ¼ of the sliced avocado, ¼ cup lime sauce, and ¼ cup shredded cheese.
  • Roll up the tortillas, tucking in the sides to form a wrap.
  • Serve with lime wedges on the side.

Notes

  • I use parsley in the sauce because cilantro (coriander) tastes like soap to me!
    • Use whatever herb you prefer
  • I use a NutriBullet to blend the sauce, you may need a bit of extra lime juice to get the sauce to blend if you have a different sized blender.
