Ingredients

  • 1 lb (450 g) ground beef 95/5 or better
  • 1 small onion finely diced
  • 2 cups (130 g) protein pasta dry
  • 1 can diced tomatoes undrained
  • 1 cup (240 ml) bone broth
  • 3 tablespoon (28 g) tomato paste
  • 1 teaspoon Italian herb seasoning
  • 1 tablespoon (15 g) yellow mustard
  • 2 cups (200 g) low-fat cheese divided in half
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions 

  • Preheat oven to 425°F (220°C).
  • In a large bowl, mix together the uncooked ground beef, onion, pasta, diced tomatoes with their juice, bone broth, tomato paste, mustard, 1 cup of the shredded cheese, salt, and pepper.
  • Divide the mixture evenly among four oven-safe 600 ml glass bowls.
  • Cover each bowl tightly with aluminum foil.
  • Place the bowls on a baking sheet and bake for 20 minutes.
  • Remove from oven, carefully uncover (watch for steam), and stir each portion.
  • Top each bowl with the remaining cheese.
  • Return to oven, uncovered, and bake for an additional 5-7 minutes, or until cheese is melted and bubbly.
  • Let cool for 3-5 minutes before serving.

Notes

  • Total cook time is about 25 minutes, plus 5 minutes cooling time.
  • Ensure your glass bowls are oven-safe before baking.
  • The mixture may look liquidy at first, but the pasta will absorb the liquid as it cooks.
  • For food safety, ensure the beef is cooked through (no pink) before serving.
