In a medium bowl, whisk the eggs together. Season with salt & pepper.
Line a muffin tin with silicone cups.
Add ham slices to each tin slot until it is fully covered. The number of ham slices you need will depend on what brand you use. We need 3 small slices to cover each slot.
Pour equal amounts of egg mixture into each muffin tin.
Add cheese, pepper, and onion. Optional to add additional savory seasoning.
Use silicone muffin liners to keep egg from sticking to the tin.
Don't overfill the cups or the egg will run over the top! Fill ¾ full with egg then add toppings, the bites will rise and fill the whole cup as they bake.
