Ingredients

  • 1 ¾ lb (800 g) 95/5 ground beef
  • 4 medium sweet potatoes diced
  • 1 large onion chopped
  • 3 cups (180 g) green beans trimmed and cut into 1-inch pieces
  • 3 cloves garlic minced
  • ¾ cup (180 ml) low-sodium bone broth
  • 3 tablespoons (42 g) tomato paste
  • teaspoons dried thyme
  • Salt and pepper to taste

Instructions 

  • Preheat oven to 400°F (200°C).
  • Spray diced sweet potatoes with olive oil cooking spray, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  • While sweet potatoes are roasting, brown the ground beef in a large skillet over medium heat.
  • Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
  • Stir in green beans, beef broth, tomato paste, and thyme. Simmer for 10 minutes.
  • Season with salt and pepper to taste.
  • Serve with roasted sweet potatoes immediately or into equal portions for later.
