Maple Glazed Salmon Bites & Rice

Ingredients

  • 4 (600 g) salmon fillets about 150g each
  • 1 bunch asparagus trimmed
  • salt and pepper to taste
  • olive oil cooking spray
  • 5 medium (600 g) low carb potatoes about 150g uncooked for each serve

For the maple glaze:

  • ¼ cup (80 g) sugar free maple syrup
  • 2 tablespoons (16 g) soy sauce
  • 1 clove garlic minced
  • 1 teaspoon grated fresh ginger
  • ¼ teaspoon red pepper flakes optional

Instructions 

  • Preheat oven to 200 C (400 F).
  • Spread potatoes on a large baking sheet. Lightly spray potatoes with olive oil cooking spray, season with salt and pepper. Roast for 15 minutes.
  • While potatoes are roasting, cut salmon into 1-inch bites.
  • Prepare the maple glaze: In a large bowl, whisk together maple syrup, soy sauce, minced garlic, grated ginger, and red pepper flakes (if using).
  • Add the salmon to the bowl and gently stir until each piece is coated.
  • On a second baking sheet, arrange salmon bites. Season with salt and pepper.
  • Brush the salmon bites with the maple glaze.
  • Once the potatoes have baked for 15 min, take out of the oven. Give them a stir, push them to the side and add the uncooked asparagus.
  • Increase the oven temperature to 450 F (225 C). Pop both the salmon and the potato/asparagus tray back in the oven.
  • Bake for an additional 8-10 minutes, or until salmon is cooked through and asparagus is tender-crisp. (Note: Cooking time is reduced due to smaller salmon pieces.)
  • Divide the meal into containers for storage or serving. We use 600 ml glass containers.

Notes

  • This recipe can be easily adapted for dump-and-bake in the glass containers:
    • Divide the seasoned sweet potatoes among the four containers and bake for 15 minutes.
    • Add the seasoned salmon and asparagus to each container,
    • Return to the oven for 12-15 minutes.
  • Note that cooking times may vary slightly when using glass containers instead of a sheet pan. Always ensure the salmon reaches a safe internal temperature of 63°C (145°F).
  • We bake on sheets for this one so the salmon pieces are spread out and get crispy all the way around.
