Ingredients

Instructions
In a large bowl, whisk together the eggs and Greek yogurt until well combined. Season with salt and pepper.
Lightly spray a non-stick skillet with olive oil cooking spray.
Add diced bell pepper and onion, sauté for 3-4 minutes until softened.
Add chopped spinach, cook for 1-2 minutes until wilted.
Set aside to cool slightly.
On medium-low heat, pour ¼ of the egg mixture into the same veggie pan.
When the edges start to set, add ¼ of the cooled vegetable mixture and 1 tablespoon of cheese to one half of the omelet.
Fold the other half over the vegetables and cheese.
Cook until the eggs are set and the cheese is melted.
