Ingredients

  • 12 large eggs
  • ½ cup (120 g) non-fat Greek yogurt
  • 1 small bell pepper diced
  • 1 small onion diced
  • 2 cups (60 g) fresh spinach
  • ¼ cup (20 g) low-fat cheese shredded
  • Salt and pepper to taste
  • salsa optional garnish

Instructions 

  • In a large bowl, whisk together the eggs and Greek yogurt until well combined. Season with salt and pepper.
  • Lightly spray a non-stick skillet with olive oil cooking spray.
  • Add diced bell pepper and onion, sauté for 3-4 minutes until softened.
  • Add chopped spinach, cook for 1-2 minutes until wilted.
  • Set aside to cool slightly.
  • On medium-low heat, pour ¼ of the egg mixture into the same veggie pan.
  • When the edges start to set, add ¼ of the cooled vegetable mixture and 1 tablespoon of cheese to one half of the omelet.
  • Fold the other half over the vegetables and cheese.
  • Cook until the eggs are set and the cheese is melted.
