Instructions
Cook the white rice according to package instructions and set aside.
In a large wok or skillet, cook the ground chicken over medium-high heat until no longer pink.
Add the diced onion and red pepper, cooking for 2-3 minutes until slightly softened.
Add the frozen mixed vegetables and cook for another 2-3 minutes.
Push the chicken to one side of the pan and scramble the eggs on the other side.
Add the cooked white rice to the pan and stir everything together.
Add the sauce ingredients to the pan and stir to combine. Stir fry for another 2-3 minutes until everything is well combined and heated through.
