Ingredients

  • g (800 g) ground chicken breast
  • 2 eggs
  • 1 cup (150 g) mixed frozen vegetables
  • 1 red pepper diced
  • 1 small onion diced
  • 4 cups (600 g) cooked white rice about 260g uncooked
  • salt & pepper to taste

Sauce

  • 2 tablespoon (28 g) oyster sauce
  • 2 tablespoon (32 g) low-sodium soy sauce
  • 1 tablespoon (20 g) honey
  • 1 tablespoon (14 g) rice vinegar

Instructions 

  • Cook the white rice according to package instructions and set aside.
  • In a large wok or skillet, cook the ground chicken over medium-high heat until no longer pink.
  • Add the diced onion and red pepper, cooking for 2-3 minutes until slightly softened.
  • Add the frozen mixed vegetables and cook for another 2-3 minutes.
  • Push the chicken to one side of the pan and scramble the eggs on the other side.
  • Add the cooked white rice to the pan and stir everything together.
  • Add the sauce ingredients to the pan and stir to combine. Stir fry for another 2-3 minutes until everything is well combined and heated through.
